Sweet Energy Bites

These bite-sized balls pack a nutritional punch!

Loaded with real food ingredients that give you a hefty dose of healthy fat (including plant-based omega-3), protein, and unrefined carbohydrates all at once. As well as balance mood, energy, and hormones. There is no added sweetener in this recipe, only the purest source derived straight from nature. Yep, dates are literally nature’s dessert. High in micronutrients, calcium, magnesium, potassium and selenium. If you are unsure of these large raisin-looking fruits I promise this recipe will change your mind!

The perfect grab-and-go snack for busy work days, Moms in motion, sweet treat cravings, and kiddos too!  

 

Makes 18-20 balls or bite sized bars if you have a mold.

What you need:

2 cups dates, de-pitted and chopped in half

1 cup sliced almonds (whole is fine too)

¼ cup chia seeds

¼ cup hemp seeds

¼ cups diced walnuts

¼ cup unsweetened coconut flakes

3 tbsp of your choice of nut or seed butter (I love using the nut and seed butter mix from Costco)

2 tbsp ground flaxseed

1 heaping tbsp coconut oil

1 tbsp cacao powder (optional)

What to do:

1. Place almonds, walnuts, chia, hemp, and ground flax into a food processor. Process on high for about 1 minute until nuts and seeds are well combined.

2. Next add dates, coconut oil, and nut or seed butter of your choice. Process on high for another 1-2 minutes until the mixture is well combined and sticky.

3. Remove the canister and blade from the processor. Scoop out the mixture and using your hands form bite-sized balls.

5. Option to roll balls over extra coconut flakes until covered.

6. Store in an airtight container in the fridge for 1 week or freeze.
